Is there a best time of year to harvest, I believe autumn when the leaves have died down or early spring are recommended
And you didn't mention that despite common sense, the longer you wait before you put in the vinegar after grinding the hotter the result
More heat being the favoured result, I do the processing outside!

You have more experience and expertise with horseradish than I do, Ray, so I'll take your advice. I sense an autumn harvest is best as that gives you a full season to admire the leaves.
