Robert. I found an ink cap a couple of weeks ago on the Glendowie reserve but I couldn't find a recipe for it and it may have been a bit late anyway. I found it fascinating to watch as it collapsed over the next 24 hours.
Hi Earl I generally pick these mushrooms a little earlier than the one pictured - they're best when they're all white and have no 'inking'. They turn very quickly from sound to mush. I sliced an fried mine in garlic and butter. Nice. Have you tried the boletes? Larch boletes are very tasty, cooked the same way. I've not yet found a cep, but hear they are the best.
I've got a shiitake kit that I'm going to open today and get started with, cutting a fresh alder log and drilling holes for the dowels. I've also got to visit a oyster mushroom grower in Bluff who has his production line well under way. He says he has more mushrooms than he knows what to do with :-) He should call them 'Bluff Oysters' when he comes to market them.
